The ancient Roman tradition of 'pinza' has been revived with a combination of modern nutritional science and wisdom of the past, resulting in lighter and more digestible pizzas. The use of non-GMO wheat flour, soy flour, rice flour, and wheat sourdough, along with a special dough maturation process involving at least 48 hours of levitation, ensures the quality of the products.
